Healthy Banana Pancakes

For breakfast this morning I tried to make the 2 ingredient banana pancakes. I don’t know what kind of magic people use to get them to work but the banana and egg just don’t make a realistic pancake so I tweaked them a little bit. Once I made a few changes they were great! They were only 65 calories per pancake. The pancake mix you buy in the store is 150 calories per pancake. My 2 ingredient pancake became 5 though.

So here’s the recipe…..

Healthy Banana Pancakes

Yields: 3 Calories: 65 each


1 medium size Banana (ripe)

1 large egg

1/4 tsp. almond extract

1/2 tsp. baking powder

2 tsp. all purpose flour

Heat griddle to 350

In a medium mixing bowl mash banana. Add egg and mix. Add almond extract, baking powder, and flour then mix. Spray griddle with non-stick spray. Use a 1/4 cup measuring cup to make 3 pancakes. Cook as you would a normal pancake. Tada! you will then have 3 healthy pancakes!


Looks just like a regular pancake. I tried adding frozen blueberries to the 2 ingredient pancakes but that created too much moisture I think and they didn’t work. It might be ok to add blueberries to this version though.
